Blueberry and Ginger Granita

INGRIDIENTS:

2 tbsp grated ginger / plus lemongrass, basil or mint
1/2cup fine brown sugar
2 1/2cups fresh blueberries
3/4cups water
2 tbsp of squeezed lemon or lime juice
pinch of grated tonka bean
a loooooot of iceeeeeeeee!!!

PREPARATION:

1. Put all the ingredients in the blender and surround them with ice: first put the ice, then the ingredients, then some more ice. You will need a powerful blender that can crush the ice but doesn’t puree it.

2. Blend well, pour the mixture in glasses and serve with popsicle sticks (Ok, spoons will work too). For a ‘night granita’, add herbs and alcohol to the recipe.
