INGREDIENTS (2 PERSONS):
400 g of fresh salmon or two beautiful bass fishes (wild!)olive oil
200 g of Roko's blueberries
Young vegetables;
2, 3 yellow zucchini
1 fennel
200 g young peas
2, 3 branches of agretti (Mediterranean herb rich in salt and calcium)
2,3 small leeks
1 lemon (organic/homemade)
salt, a bit of grated tonka or red pepper
baking paper
a string
PREPARATION:
1. Preheat the oven to 180/200 C°.
2. Place the fish fillets on a baking paper. Each has to have its own paper so you can wrap it.
3. Grate fresh vegetables on the fish fillets, add some peas and blueberries. Spice it with salt, olive oil, lemon juice and grated lemon peel, add pepper or tonka. Wrap it in a baking paper and tie it up with a non-plastic string.
4. Place the packets in the oven and bake it for 20 to 30 minutes. When flavours begins to spread and packets get small purple flakes (from baked blueberries) take it out from the oven and serve. Let your family and friends play with unwraping and discovering this unusual, delicious meal. Dip bread into a purple sauce or pour the sauce over boiled potatoes if you eat them with the fish.
